Stir-Fried Beef with Shiitake Mushrooms (香菇炒肉)

- 600 grams beef
- 200 grams fresh shiitake mushrooms or dried shiitake mushrooms, rehydrated
- 2 tablespoon vegetable oil
- 3 cloves garlic minced
- 1 bell pepper optional, cubed
- 2 tablespoon light soy sauce
- 1 tablespoon dark soy sauce
- 1 teaspoon sugar
- 1 tablespoon oyster sauce
- 1 teaspoon salt
- several drops of Sichuan pepper oil
Prepare the ingredients
Thinly slice the beef into bite-sized pieces.
Slice the shiitake mushrooms into thin strips:
If using fresh shiitake mushrooms, clean them with a damp cloth and remove the stems. Slice the caps.
If using dried shiitake mushrooms, soak them in warm water for about 20-30 minutes until they become soft. Drain, remove the stems, and slice the caps.
Cube the bell peppers.
Mince the garlics
Blanch the mushrooms
Boil some water in a small pot, add the Shiitake mushrooms and blanch for 1 minute, remove it from water and drain well, set aside.
Stir-frying
Heat 2 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
Add the Beef slices to the wok. Stir-fry until the beef is no longer pink and starts to brown.
Add the minced garlic, Stir-fry for about 30 seconds until fragrant.
Add the bell pepper and blanched shiitake mushrooms to the wok.
Add sugar, Light soy sauce, dark soy sauce, salt and oyster sauce to the wok ,stir fry for 2-3 minutes, until the sauce thickens.
Finishing Touches:
Turn off the heat, drizzle with Sichuan pepper oil and stir to combine.
Serve hot with steamed rice or noodles.
