- 1 big potato
- 1-2 dried chili peppers adjust according to your spice preference
- 1 tsp Sichuan peppercorn
- 2-3 garlic cloves
- 2 tablespoons vegetable oil
- 1/2 teaspoon salt
- 1 tablespoon soy sauce
- 1 tablespoon vinegar Chinese vinegar or white vinegar
- 1/2 cup julienned red bell pepper optional
- 1/2 cup chopped Fresh cilantro
Prepare the Potatoes:
Peel the potatoes and then julienne them into thin strips. To achieve the best texture, try to keep the strips uniform in size.
Rinse the shredded potatoes in cold water several times to remove excess starch. This will help keep them crispy when cooked.
Soak the potatoes in a bowl of cold water for about 5 minutes, then drain and set aside.
Prepare other ingredients:
Stir-Fry:
Heat the vegetable oil in a wok or large skillet over medium-high heat.
Add dried chili peppers and sichuan peppercorn, heat in the oil until smell the fragrant, take the chili peppers and peppercorns out of the pan.
Add minced garlic, stir-frying for about 30 seconds until fragrant.
Add shredded potatoes, add salt, soy-sauce, vinegar, stir- fry for about 1 minute.
Add the julienned red bell pepper . Stir-fry for another 1 minutes until slightly softened.
Turn off the heat, add fresh cilantros, and stir slightly.
- The key to a great Sour and Spicy Shredded Potatoes dish is to maintain the crunchiness of the potatoes. Avoid overcooking them during the stir-fry process.
- Adjust the amount of chili peppers to your spice tolerance. You can also use dried red chili flakes if fresh chili peppers are not available.
