Some friends from Portugal joined us for lunch, and they were trying to guess what type of vegetable this dish featured. They were shocked to discover that it was actually shredded potatoes! They had never experienced potatoes with this texture before.
Actually Sour and Spicy Shredded Potatoes, or 酸辣土豆丝 (Suān Là Tǔ Dòu Sī), is a popular Chinese dish that combines the crunch of fresh potatoes with a tangy and spicy flavor. This dish is a perfect balance of sourness and spiciness, making it an excellent appetizer or side dish. It’s quick to prepare and sure to be a hit with anyone who loves bold flavors.

Sour and Spicy Shredded Potatoes (酸辣土豆丝)
Ingredients
- 1 big potato
- 1-2 dried chili peppers adjust according to your spice preference
- 1 tsp Sichuan peppercorn
- 2-3 garlic cloves
- 2 tablespoons vegetable oil
- 1/2 teaspoon salt
- 1 tablespoon soy sauce
- 1 tablespoon vinegar Chinese vinegar or white vinegar
- 1/2 cup julienned red bell pepper optional
- 1/2 cup chopped Fresh cilantro
Instructions
Prepare the Potatoes:
- Peel the potatoes and then julienne them into thin strips. To achieve the best texture, try to keep the strips uniform in size.
- Rinse the shredded potatoes in cold water several times to remove excess starch. This will help keep them crispy when cooked.
- Soak the potatoes in a bowl of cold water for about 5 minutes, then drain and set aside.
Prepare other ingredients:
- Mince the garlic cloves.
- cut bell pepper into thin strips.
- Cut the Fresh Cilantro
Stir-Fry:
- Heat the vegetable oil in a wok or large skillet over medium-high heat.
- Add dried chili peppers and sichuan peppercorn, heat in the oil until smell the fragrant, take the chili peppers and peppercorns out of the pan.
- Add minced garlic, stir-frying for about 30 seconds until fragrant.
- Add shredded potatoes, add salt, soy-sauce, vinegar, stir- fry for about 1 minute.
- Add the julienned red bell pepper . Stir-fry for another 1 minutes until slightly softened.
- Turn off the heat, add fresh cilantros, and stir slightly.
Serve:
- Transfer the sour and spicy shredded potatoes to a serving plate. Enjoy your Sour and Spicy Shredded Potatoes as a delicious accompaniment to any meal!
