How to make Vegetarian fried noodles (蔬菜炒面)

Ingredients
  

  • 200 g of your favorite noodles
  • 2 tablespoons vegetable oil
  • half onion thinly sliced
  • 1 carrot thinly sliced
  • 5-6 mushrooms thinly sliced
  • 1 cup broccoli florets
  • 2 cloves garlic minced
  • 1 tbsp cooking wine
  • 2 tablespoon light soy sauce
  • 1 tsp dark soy sauce optional
  • 1 tablespoon oyster sauce use vegetarian oyster sauce for a vegan dish
  • 1 tsp sugar
  • 1/2 tsp sichuan pepper substitute with black pepper
  • salt to taste
  • optional : 1 egg per person
  • optional : black sesame seeds for topping

Instructions
 

  • Cook your chosen noodles according to the package instructions. Once cooked, rinse with cold water, drain. Add 1 tbsp light soy sauce and half tsp sugar, stir well and set aside.

  • Heat vegetable oil in a large pan or wok over medium-high heat.

  • Add sliced onions, fry until translucent.

  • Add sliced carrots, mushrooms, broccoli florets to the pan. Stir-fry for 3-5 minutes until the vegetables are slightly tender but still crisp.

  • Add cooking wine, light soy sauce, dark soy sauce, sichuan pepper and sugar to the vegetables, stir it up
