How to make Meat Sauce Noodles

Noodles hold a special place in Chinese cuisine. More than just a staple food, noodles symbolize longevity, prosperity, and the rich tapestry of Chinese culinary traditions.

One of the most captivating aspects of Chinese noodles is their incredible diversity. Across China’s vast landscape, noodles take on various forms, textures, and flavors. Each region boasts its own signature noodle dishes, reflecting local ingredients, climate, and culinary preferences. Today I’m going to share a noodle recipe commonly used in Northern China – Meat sauce noodles.

Quick and Delicious Chinese Meat Sauce Noodles 肉酱拌面

This quick and easy dish features tender ground beef or pork, fragrant garlic and a savory blend of cooking wine and soy sauce. Ready in just 10 minutes, it’s a perfect choice for a delicious, fuss-free meal that everyone will love.

Ingredients
  

  • 200 g fresh noodles or dried noodles of your choice
  • 200 g ground pork or beef
  • 2 tablespoons oil
  • 2 cloves garlic minced
  • 1 tablespoons Cooking wine
  • 2 tablespoons Light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tsp sugar
  • 1 tbsp oyster sauce
  • 1/2 tsp salt adjust according to you taste
  • 2 tsp corn starch
  • 1/2 cup water
  • 1 cucumber julienned
  • a pinch of coriander for garnish
  • Sesame seeds for garnish

Instructions
 

  • Cook the noodles according to the package instructions until al dente. Rinse it with hot water, Drain and set aside.

  • Mix together the cooking wine, sugar, light soy-sauce, dark soy-sauce, oyster sauce, salt, corn starch and water. Stir well to combine everything evenly.

  • Heat vegetable oil in a large pan or wok over medium-high heat. Add minced garlic stir-frying until fragrant.

  • Add ground beef (or pork) to the pan, breaking it up with a spatula or spoon. Cook until browned and cooked through.

  • Pour in the prepared sauce mixture, Bring the mixture to boil, keep string until the sauce thickened, then off the heat.

Assemble the Dish:

  • Divide the cooked noodles into serving bowls. lay the julienned cucumber on top of the noodles, and pour beef sauce over . Garnish with fresh cilantro and sesame seeds.
  • Serve the Beef Zha Jiang Mian hot, mixing everything together before eating to distribute the sauce evenly with the noodles.

Notes

Rinsing the noodles after cooking helps prevent them from sticking together. It washes away excess starch on the surface of the noodles, which can cause them to clump up. This step ensures that your noodles remain separate and easy to mix with the delicious sauce.
